Something I made this week: Pan Chuta

Pan Chuta Recipe (Peruvian Bread)

Ingredients

For the Dough:

  • 4 cups all-purpose flour

  • 2 teaspoons instant yeast

  • 1 teaspoon salt

  • 1/4 cup sugar

  • 1 cup warm milk (about 110°F)

  • 1/4 cup unsalted butter, melted

  • 2 large eggs

  • 1/2 teaspoon ground nutmeg

  • 1/4 teaspoon ground star anise

For the Topping:

  • 1/4 cup wheat germ

Instructions

Prepare the Dough:

  1. In a large mixing bowl, combine the flour, instant yeast, salt, sugar, ground nutmeg, and ground star anise. Mix well.

  2. In another bowl, whisk together the warm milk, melted butter, and eggs.

  3. Gradually add the wet mixture to the dry ingredients, stirring until a dough forms.

Knead the Dough:

  1. Turn the dough out onto a floured surface. Knead for about 8-10 minutes, until smooth and elastic.

  2. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape the Breads:

  1. Once risen, punch down the dough and divide it into 12 equal pieces.

  2. Shape each piece into a round ball and place them on a baking sheet lined with parchment paper.

  3. Cover the shaped dough balls with a kitchen towel and let them rise for another 30 minutes.

Prepare for Baking:

  1. Preheat the oven to 350°F (175°C).

  2. In a small bowl, beat the remaining egg and brush it over the tops of the dough balls for a golden finish. Sprinkle with sesame seeds, if desired.

Bake:

  1. Bake in the preheated oven for 20-25 minutes, or until the breads are golden brown and sound hollow when tapped on the bottom.

Cool and Serve:

  1. Remove from the oven and let cool on a wire rack. Serve warm or at room temperature.
