Grilled Baby Artichokes with Herbed Aioli

Ingredients:

  • 1 pound baby artichokes

  • 2 tablespoons olive oil

  • Salt and pepper to taste

For the Herbed Aioli:

  • 1/2 cup mayonnaise

  • 2 cloves garlic, minced

  • 1 tablespoon lemon juice

  • 1 teaspoon Whole Grain mustard

  • 1 tablespoon fresh parsley, chopped

  • 1 tablespoon fresh chives, chopped

  • Salt and pepper to taste

Instructions:

  1. Prepare the Artichokes:

    • Trim the top of the artichokes and remove the tough outer leaves.

    • Cut them in half lengthwise and scoop out the fuzzy choke.

    • Place the artichokes in a bowl of water with lemon juice to prevent browning.

  2. Grill the Artichokes:

    • Preheat the grill to medium-high heat.

    • Drain the artichokes and pat them dry.

    • Toss the artichokes with olive oil, salt, and pepper.

    • Place the artichokes on the grill, cut side down, and grill for about 5-7 minutes until tender and charred.

  3. Make the Herbed Aioli:

    • In a small bowl, mix together mayonnaise, minced garlic, lemon juice, whole grain mustard, parsley, chives, salt, and pepper.

    • Adjust seasoning to taste.

  4. Serve:

    • Arrange the grilled artichokes on a plate and serve with the herbed aioli on the side for dipping.
