Grilled Baby Artichokes with Herbed Aioli
Ingredients:
1 pound baby artichokes
2 tablespoons olive oil
Salt and pepper to taste
For the Herbed Aioli:
1/2 cup mayonnaise
2 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon Whole Grain mustard
1 tablespoon fresh parsley, chopped
1 tablespoon fresh chives, chopped
Salt and pepper to taste
Instructions:
Prepare the Artichokes:
Trim the top of the artichokes and remove the tough outer leaves.
Cut them in half lengthwise and scoop out the fuzzy choke.
Place the artichokes in a bowl of water with lemon juice to prevent browning.
Grill the Artichokes:
Preheat the grill to medium-high heat.
Drain the artichokes and pat them dry.
Toss the artichokes with olive oil, salt, and pepper.
